for an single touch point solution, like the one that sparkfun offers, it is much easier to go for a parallel solution, if you have a class of just 2-5 students. once you get more students, make sure to use an interactive teaching board, which will make your life much easier. however for a single user solution, you can still use the parallel port based boards, which have a much better price tag than the wireless board. this is because they are made to be a single user solution.
often there are two different price points for these boards. one is the one which is designed for a single user and the one designed for multiple users. if you are thinking about a solution with a plug in console, then a single user solution will be a much easier choice.
